Ingredients

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 cup BBQ sauce
  • 2–3 chipotle peppers in adobo sauce, minced
  • 2 tablespoons adobo sauce
  • 2 tablespoons honey
  • 6 ears fresh corn on the cob
  • 1/2 cup heavy cream
  • 4 tablespoons butter
  • 2 tablespoons fresh lime juice
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup cotija cheese, crumbled

Instructions

  1. 1. Mix BBQ sauce, minced chipotle peppers, adobo sauce, and honey in a bowl. Reserve half for basting.
  2. 2. Pat chicken dry, season with salt, pepper, and garlic powder. Marinate in half the sauce for 2 hours.
  3. 3. Preheat grill to medium-high heat (375-400°F). Clean and oil grates.
  4. 4. Remove husks from corn, brush with olive oil, and season with salt.
  5. 5. Grill corn for 10-12 minutes, turning frequently until charred on all sides. Remove and cool.
  6. 6. Grill chicken for 6-7 minutes per side, basting with reserved sauce during final minutes, until internal temperature reaches 165°F.
  7. 7. Let chicken rest 5 minutes while preparing corn.
  8. 8. Cut kernels from corn cobs into a bowl, scraping cobs to extract corn milk.
  9. 9. Heat butter in a large skillet, add corn kernels and milk, then pour in heavy cream.
  10. 10. Cook corn mixture 5-7 minutes, stirring, until cream reduces and thickens.
  11. 11. Season corn with salt, pepper, and lime juice. Stir in cilantro and cotija cheese.
  12. 12. Serve chicken over creamed corn, garnished with extra cilantro and lime wedges.

Notes

Store chicken and corn separately in airtight containers for up to 4 days. Reheat chicken with extra sauce to prevent drying. Thin corn with milk or cream when reheating. Adjust chipotle peppers based on heat preference—use 1 for mild, 4-5 for extra spicy.
