Ingredients

- 2 cups cooked chicken, shredded or diced
- 1 cup frozen peas and carrots
- 1 cup corn
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil or butter
- 1 cup chicken broth
- 1 teaspoon Worcestershire sauce
- 1 teaspoon thyme (fresh or dried)
- Salt and pepper to taste
- 4 cups mashed potatoes
- 1 cup shredded cheddar cheese (optional)
Instructions
- Heat olive oil or butter in a large skillet over medium heat. Add chopped onion and minced garlic, and sauté for 2-3 minutes until the onion is translucent.
- Stir in the frozen peas, carrots, and corn. Cook for an additional 5 minutes.
- Add shredded chicken, chicken broth, Worcestershire sauce, and thyme. Simmer for 5-7 minutes.
- Prepare mashed potatoes if not already done.
- Spread the chicken mixture in a greased baking dish and top with mashed potatoes. Optionally sprinkle cheddar cheese on top.
- Bake in a preheated oven at 400°F for 20-25 minutes or until golden brown.
- Let cool for 5 minutes before serving.
Notes
For a healthier option, substitute mashed potatoes with cauliflower mash.
