- 1/3 cup plain yogurt
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 4 to 6 cloves garlic, minced

- 2 teaspoons smoked paprika or regular paprika
- 1 teaspoon turmeric
- 1/4 teaspoon cinnamon
- Cayenne or chili flakes, to taste
- 1 1/2 teaspoons salt
- 1 teaspoon black pepper
- Optional: pita or flatbread, sliced cucumbers, tomatoes, red onion, shredded lettuce, pickles, and sauce
Instructions
- Mix the marinade: In a big bowl, stir together yogurt, olive oil, lemon juice, garlic, and all the spices, plus salt and pepper.
- Add the chicken: Toss the chicken thighs in the marinade until fully coated. Cover and refrigerate for at least 30 minutes, ideally 4 hours or overnight.
- Cook it using your preferred method: Skillet, oven, or grill until cooked through and browned.
- Rest the chicken: Let it sit for 5 minutes before slicing to keep it juicy.
- Taste and adjust: Add more lemon or spices as needed to suit your taste.
