  • 4 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander

  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon cayenne pepper (adjust for spice level)
  • 1/4 cup plain Greek yogurt
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 1 cup mayonnaise
  • 4 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt to taste
  • Pita bread or flatbreads for serving (optional)
  • Fresh vegetables (lettuce, tomatoes, cucumbers, onions) (optional)
  • Pickles or olives for serving (optional)

Instructions

  1. Start by assembling your marinade. In a large bowl, combine minced garlic, cumin, coriander, paprika, turmeric, cinnamon, cayenne, Greek yogurt, olive oil, lemon juice, salt, and pepper. Mix until you have a smooth paste.
  2. Next, add the chicken thighs to the marinade. Make sure to coat each piece thoroughly. Cover the bowl with plastic wrap and refrigerate for at least 1-2 hours or overnight for maximum flavor.
  3. After marination, preheat your grill or oven to medium-high heat. If you’re using a skillet, heat a tablespoon of olive oil over medium heat.
  4. If grilling, thread the marinated chicken onto skewers. Grill for about 6-8 minutes on each side, or until the chicken reaches an internal temperature of 165°F. If you’re pan-frying, cook for about 5-7 minutes on each side until nicely browned and cooked through.
  5. Meanwhile, prepare your garlic sauce. In a small bowl, mix together mayonnaise, minced garlic, lemon juice, and salt. Adjust the flavor based on your preference; if you love garlic, feel free to add more!
  6. Once the chicken is done, let it rest for a few minutes before slicing it into thin strips. This helps retain its juices, keeping it tender and flavorful.
  7. Serve the chicken on a platter with your choice of pita or flatbread, fresh vegetables, and a generous drizzle of garlic sauce.

Notes

Marinate the chicken a day in advance for deeper flavors. Can easily be adjusted for spiciness and dietary preferences.
