  • 1 pound boneless, skinless chicken breasts or thighs
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream or milk
  • 2 tablespoons olive oil or butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, diced
  • 2 celery stalks, diced
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1 tablespoon cornstarch (optional for thickening)
  • 2 cups puff pastry or biscuit dough (for topping, optional)

Instructions

  1. Start by heating the olive oil or butter in a large pot over medium heat. Add the diced onions and garlic, sautéing until fragrant and translucent, about 3-4 minutes.
  2. Once the onions are ready, toss in the diced carrots and celery. Stir regularly for another 5 minutes.
  3. Next, add the chicken breasts or thighs to the pot. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat and let it simmer uncovered for approximately 20 minutes or until the chicken is cooked through.
  4. Once the chicken is done, remove it from the pot. Let it cool for a few minutes before shredding it into bite-sized pieces.
  5. Return the shredded chicken back to the pot. Stir in the heavy cream, frozen peas, dried thyme, rosemary, salt, and pepper. If you prefer a thicker soup, mix cornstarch with a bit of water, then add it to the pot.
  6. Allow it to simmer for an additional 5 minutes to meld those delicious flavors together.
  7. If you’re adding puff pastry or biscuit dough, prepare it according to package instructions, then bake it until golden brown.
  8. Serve the soup warm, topped with the pastry.

Notes

For a healthier version, consider using Greek yogurt instead of heavy cream. Leftover rotisserie chicken is perfect for this dish.
