Description
A cozy, cheesy, one-pan meal that brings the flavors of Chicken Parmesan in a quick and easy pasta dish.

- 1 pound boneless skinless chicken breast or thighs, cut into bite size pieces
- 8 ounces pasta (penne, rotini, or shells)
- 2 to 2.5 cups marinara sauce
- 2 cups chicken broth
- 3 cloves garlic, minced
- 1/2 small onion, chopped (optional)
- 1/3 to 1/2 cup grated Parmesan cheese, plus more for serving
- 1 to 1.5 cups shredded mozzarella cheese
- Italian seasoning, salt, pepper, red pepper flakes (optional)
- Olive oil (for browning the chicken)
Instructions
- Heat a big skillet or deep pan over medium high heat and add olive oil. Toss in the chicken pieces and season with salt, pepper, and Italian seasoning. Cook until browned and mostly cooked through.
- Push the chicken to the side and add onion (if using) and garlic. Stir for about 30 seconds, then pour in the marinara sauce and chicken broth, scraping the bottom of the pan.
- Add the dry pasta into the sauce mixture. Stir and bring to a gentle simmer. Lower the heat, cover and stir every couple of minutes until the pasta is tender (10-14 minutes).
- When the pasta is tender, sprinkle in the Parmesan and stir, then top with mozzarella. Cover and let it melt for a couple of minutes.
- Let it sit for a minute to settle, then serve hot with more Parmesan and any preferred toppings.
Notes
Use a wider pan for even cooking and to prevent pasta from clumping. Taste before serving to adjust seasonings.
