  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 tablespoon lime juice
  • 1 bell pepper (any color, diced)
  • 1 onion (sliced)
  • 2 cloves garlic (minced)
  • 1 jalapeño (optional, sliced)
  • 2 cups cooked rice or quinoa
  • 1 cup corn (canned or frozen)
  • 1 can black beans (drained and rinsed)
  • 1 avocado (sliced or diced)
  • Fresh cilantro (for garnish)
  • Lime wedges (for squeezing)

Instructions

  1. Start by marinating the chicken. In a bowl, mix olive oil, chili powder, paprika, cumin, salt, pepper, and lime juice until combined. Toss in the chicken breasts, ensuring they’re well-coated. Let this marinate while you prepare the veggies.
  2. Heat a large skillet over medium-high heat. Once hot, add the marinated chicken. Cook for about 5-7 minutes on each side or until the chicken is cooked through and no longer pink. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.
  3. In the same skillet, add a little more olive oil if needed. Sauté the sliced onions, bell pepper, and jalapeño for about 5-7 minutes until they are tender and slightly caramelized. Stir in the minced garlic for the last minute of cooking until fragrant.
  4. Prepare the bowls. Start with a base of rice or quinoa, then layer with corn, black beans, and the sautéed veggies. Add your sliced chicken on top.
  5. Finally, add fresh avocado slices and sprinkle with cilantro. Serve with lime wedges for that extra zing!

Notes

For a vegetarian option, swap the chicken for grilled veggies or tofu. If you’re looking to cut down on carbs, skip the rice and use cauliflower rice instead.
