- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 large egg
- ¾ cup milk (or buttermilk)
- ⅓ cup vegetable oil
- 1 teaspoon vanilla extract
- 1 ½ cups fresh or frozen cherries, pitted and halved
- ¼ cup brown sugar
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- ½ teaspoon cinnamon (optional)
Instructions
- Preheat your oven to 375°F (190°C) and grease your muffin tins.
- Whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
- Combine the egg, milk, vegetable oil, and vanilla extract in another bowl.
- Pour the wet mixture into the dry ingredients and stir gently.
- Mix the cherries, brown sugar, cornstarch, lemon juice, and cinnamon together.
- Fold half of the cherry mixture into the muffin batter.
- Spoon the batter into the muffin tins and add a spoonful of the remaining cherry filling on top.
- Bake for about 18-20 minutes, or until a toothpick comes out clean.
- Cool the muffins in the pan for 5 minutes, then transfer to a wire rack.
Notes
For a vegan version, substitute egg with flaxseed meal and use almond milk. For gluten-free, try almond or coconut flour.
