- 12 oz of pasta (penne or rotini)
- 1 lb of kielbasa sausage (beef or chicken)
- 2 cups of fresh spinach
- 2 cups of shredded cheese (cheddar, mozzarella, or a mix)
- 1 cup of heavy cream
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon of Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Start by bringing a large pot of salted water to a boil. Add your pasta and cook according to the package instructions until al dente, about 8-10 minutes.
- In a large skillet, heat a tablespoon of olive oil over medium-high heat. Add the diced onion and sauté until it becomes translucent, about 3 minutes. Then, add the minced garlic and cook for an additional minute.
- Now, add the sliced kielbasa. Cook until it’s browned, about 5-7 minutes.
- Reduce the heat to medium and pour in the heavy cream. Stir in Italian seasoning, salt, and pepper while letting the cream come to a gentle simmer.
- When the cream is heated through, add the shredded cheese, stirring constantly until it melts and forms a sauce.
- Drain your pasta and toss it into the skillet with the creamy sauce. Add the fresh spinach and mix until combined and the spinach is wilted, about 1-2 minutes.
- Taste the pasta and adjust seasoning if necessary.
- Finally, serve hot, garnished with extra cheese or fresh herbs if desired.
Notes
Substitutions include veggie sausage or mushrooms for a vegetarian option. Use whole wheat or gluten-free pasta for a lighter dish.
