Ingredients

  • 1 pound ground beef
  • 2 medium zucchinis, sliced
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes (canned or fresh)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1 cup cooked rice (white or brown)
  • ½ cup grated Parmesan cheese
  • Olive oil or butter for cooking

Instructions

  1. Begin by preheating your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil or butter over medium heat. Add the chopped onion and minced garlic, stirring until fragrant.
  3. Next, add the ground beef to the skillet and cook until browned.
  4. Once the beef is cooked, stir in the sliced zucchini and diced tomatoes. Cook for 5-7 minutes.
  5. In a large baking dish, combine the beef and zucchini mixture with the cooked rice.
  6. Sprinkle half of the shredded cheddar cheese over the top, then add the remaining cheese and grated Parmesan.
  7. Cover the dish with aluminum foil and bake for about 25 minutes.
  8. Once baked, remove from the oven and let it cool for a few minutes before serving.

Notes

For healthier alternatives, use ground turkey or cauliflower rice. Great for meal prep!
