  • 1 cup long-grain white rice (uncooked)
  • 1 can (15 oz) diced tomatoes (with juice)
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • 1 cup beef broth (or chicken broth)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Optional: 1 cup frozen mixed vegetables (like peas and carrots)
  • Optional: Fresh parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch casserole dish.
  2. In a large skillet over medium heat, brown the ground beef, breaking it apart with a spatula. Drain excess fat, then add chopped onion and minced garlic, sautéing until onion is translucent.
  3. Stir in rice, diced tomatoes (with juice), cream of mushroom soup, beef broth, garlic powder, onion powder, paprika, salt, and pepper. If adding mixed vegetables, toss them in now and stir to combine.
  4. Pour the mixture into the prepared casserole dish and spread evenly. Sprinkle shredded cheese across the top.
  5. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until cheese is golden and bubbly.
  6. Let sit for about 5 minutes before serving to allow it to settle.
