Description

  • 1/2 cup buffalo sauce (adjust spice level to your preference)
  • 1 cup shredded cheese (cheddar or pepper jack for extra kick)
  • 1/2 cup cream cheese, softened
  • 1 cup cooked rice (white, brown, or cauliflower rice for a low-carb option)
  • 1/2 cup ranch dressing or blue cheese dressing (for drizzling)
  • 4 large flour tortillas (or whole-wheat for a healthier option)
  • Chopped green onions for garnish (optional)
  • Lettuce, diced tomatoes, and avocado for filling and topping (optional)
  • Black beans or corn for added texture and flavor (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken and buffalo sauce in a large mixing bowl, mixing well.
  3. Add the softened cream cheese and shredded cheese to the chicken mixture and stir until nicely blended.
  4. Mix cooked rice with a pinch of salt and pepper in a separate bowl, adding black beans or corn if desired.
  5. Assemble your burritos by laying each tortilla flat and spooning the chicken mixture down the center, topping with rice and additional toppings.
  6. Fold the sides of the tortilla inward over the filling, then roll tightly from the bottom to the top.
  7. Place the burritos seam-side down in a greased baking dish and drizzle with dressing if desired.
  8. Bake for about 15 minutes or until heated through and cheese is bubbly and golden.

Notes
