Description

Grilled corn infused with Caribbean flavors, slathered in a creamy coconut sauce that brings a twist to your summer cookouts.


Ingredients

  • 6 ears of fresh sweet corn, husked
  • 1/2 cup coconut milk (or regular milk)
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper (to taste)
  • 1/4 cup crumbled feta or queso fresco cheese (optional)
  • Fresh cilantro or parsley, chopped (for garnish)

Instructions

  1. Start off by preparing your corn. Husk the ears and remove all the silk. Rinse them under cool water and pat them dry. If you have the time, soak the corn in cool water for about 15 minutes.
  2. While the corn is soaking, whip up your Caribbean-style sauce by mixing together the coconut milk, mayonnaise, lime juice, chili powder, smoked paprika, garlic powder, salt, and black pepper.
  3. After soaking, preheat your grill to medium-high heat.
  4. Once the grill is ready, place the ears of corn directly on the grill grates. Grill each ear for about 10-15 minutes, turning occasionally.
  5. Remove the corn from the heat and generously coat it with your coconut sauce.
  6. For an added flavor punch, sprinkle the corn with crumbled feta or queso fresco cheese.
  7. Finally, garnish your corn with freshly chopped cilantro or parsley.

Notes

Feel free to make substitutions for a vegan version by using plant-based mayonnaise and milk alternatives.
