Caprese Chicken recipe with mozzarella, tomatoes, and basil

Caprese Chicken Recipe: Quick, Healthy & Flavor-Packed Dinner

  • Author: Mark Bennett
  • Total Time: 30 minutes

Description

This Caprese Chicken recipe is a fresh, flavorful dinner made with juicy chicken breasts topped with melted mozzarella, ripe tomatoes, and fragrant basil. It’s light yet satisfying, easy enough for busy weeknights, and elegant enough for guests.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • 3 cloves garlic, minced

  • Salt and black pepper, to taste

  • 1½ cups cherry tomatoes, halved

  • 8 ounces fresh mozzarella, sliced or torn

  • ¼ cup fresh basil leaves, torn

  • Optional: balsamic glaze for drizzling

Instructions

  • Preheat oven to 400°F. Pat chicken dry and season both sides with salt and pepper.

  • Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken and sear for 4–5 minutes per side until golden.

  • Lower heat to medium. Add garlic and cook for 30 seconds until fragrant. Scatter tomatoes over the chicken.

  • Top each piece with mozzarella. Transfer skillet to oven and bake for 10–12 minutes, or until chicken reaches 165°F and cheese is melted.

  • Remove from oven, sprinkle with basil, and drizzle with balsamic glaze if using. Serve warm.

Notes

Use fresh mozzarella for the creamiest melt and classic Caprese flavor.

Don’t overcook the chicken — use a thermometer and pull it at 165°F for juicy results.

Add basil after baking to keep its flavor fresh and bright.

For meal prep, store basil and glaze separately and add after reheating.

Want extra flavor? Finish with a squeeze of lemon or sprinkle of red pepper flakes.
