Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • ½ teaspoon vanilla extract
  • 16 oz cream cheese, softened
  • 1 cup ricotta cheese
  • ¾ cup granulated sugar
  • ½ teaspoon almond extract
  • 2 large eggs
  • 1 cup mini chocolate chips (optional)
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream (store-bought or homemade)
  • Chopped pistachios for garnish (optional)

Instructions

  1. Preheat your oven to 325°F (160°C) and line a 9×9 inch baking dish with parchment paper.
  2. Combine the graham cracker crumbs, melted butter, granulated sugar, and vanilla extract in a medium bowl. Press firmly into the bottom of the prepared baking dish.
  3. Beat softened cream cheese and ricotta cheese with an electric mixer until smooth; add granulated sugar and almond extract, then mix in eggs one at a time.
  4. Fold in chocolate chips if using, then pour the mixture over the crust.
  5. Bake for 30 minutes or until edges are set and the center jiggles slightly.
  6. Cool to room temperature, then refrigerate for at least 2 hours.
  7. Whip cream with powdered sugar and vanilla extract until soft peaks form, then spread over the chilled cheesecake.
  8. Garnish with chopped pistachios if desired, lift out of the dish, cut into squares, and serve.
