Cajun Shrimp and Sausage Pasta

Description

Bold and creamy Louisiana-style pasta loaded with succulent shrimp, smoky andouille sausage, and colorful peppers in a rich Cajun cream sauce that’s ready in just 30 minutes.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 12 ounces andouille sausage, sliced
  • 12 ounces penne pasta
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 2 medium bell peppers, sliced
  • 1 medium white onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. 1. Cook pasta according to package directions in salted water until al dente. Reserve 1 cup of pasta water before draining.
  2. 2. Heat olive oil in a large skillet over medium-high heat. Add sliced sausage and cook for 4-5 minutes until browned. Remove and set aside.
  3. 3. Season shrimp with 1 tablespoon Cajun seasoning. Add to the same skillet and cook 2 minutes per side until pink. Remove and set aside.
  4. 4. Add butter to the skillet. Sauté onions and bell peppers for 4-5 minutes until softened. Add garlic and cook for 1 minute.
  5. 5. Pour in heavy cream and chicken broth. Add remaining Cajun seasoning and paprika. Bring to a gentle simmer.
  6. 6. Return sausage and shrimp to the pan. Add drained pasta and toss to combine.
  7. 7. Stir in Parmesan cheese until melted and sauce reaches desired consistency. Add reserved pasta water if needed to thin.
  8. 8. Season with salt and pepper to taste. Garnish with fresh parsley and serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Add a splash of cream or milk when reheating. For less spice, reduce Cajun seasoning to 1 tablespoon. Substitute smoked kielbasa if andouille sausage is unavailable.
