- 1 cup heavy cream
- 2 tablespoons unsalted butter
- 1 tablespoon all-purpose flour
- 2–3 cloves garlic, minced
- 1 small onion, finely chopped
- 1–2 teaspoons Cajun seasoning
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- Salt to taste
- Juice of 1/2 lemon
- Fresh parsley for garnish (optional)
Instructions
- Start by melting the butter in a medium-sized saucepan over medium heat. Allow it to foam a little before adding the chopped onions.
- Sauté the onions for about 3-4 minutes, or until they become translucent.
- Add the minced garlic, cooking for an additional minute until fragrant.
- Sprinkle in the flour, stirring continuously for about 1-2 minutes to develop a roux.
- Gradually pour in the heavy cream while whisking continuously until smooth.
- Allow the cream to come to a gentle simmer, stirring frequently.
- Mix in the Cajun seasoning, smoked paprika, black pepper, and a pinch of salt. Taste and adjust seasoning.
- Squeeze in the fresh lemon juice and give it a final stir, then remove from heat.
Notes
For a lighter version, try using half-and-half or a combination of milk and cream. For gluten-free, replace flour with cornstarch.
