- 1 medium head of green cabbage, chopped
- 2 cups of diced tomatoes (canned or fresh)
- 1 large onion, diced
- 2 cloves garlic, minced
- 4 cups of vegetable broth or chicken broth for extra flavor
- 2 medium carrots, sliced
- 2 celery stalks, chopped
- 1 bell pepper, chopped (any color)
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Optional: 1-2 bay leaves
- Optional for flavor: a splash of Apple Cider or Pomegranate Juice
Instructions
- Heat a splash of olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sautéing until translucent and fragrant.
- Toss in the chopped carrots, celery, and bell pepper, stirring frequently for about 5 minutes.
- Add the chopped cabbage and stir to incorporate. Cook for another 3-4 minutes.
- Pour in the diced tomatoes and vegetable or chicken broth. Add the dried thyme, oregano, salt, pepper, and optional bay leaves. Bring to a boil, then reduce to a simmer.
- Simmer gently for about 25 minutes, allowing flavors to meld together.
- Stir in the optional splash of juice in the last few minutes. Remove bay leaves and serve hot.
Notes
Customize by using vegetable broth for vegan options or adding protein like beans or lentils for a heartier meal.
