Description

Delicious and flaky buttermilk biscuits perfect for breakfast or as a side dish.


Ingredients

  • 2 cups all-purpose flour (plus more for dusting)
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 3/4 cup buttermilk (plus a bit more for brushing)
  • 1 tablespoon honey (optional for sweetness)
  • Parsley or chives (optional for added flavor)

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Whisk together the flour, baking powder, baking soda, and salt in a large bowl.
  3. Add the chilled butter to the flour mixture. Cut the butter into the flour until it resembles coarse crumbs.
  4. Make a well in the center and pour in the buttermilk and honey (if using), stirring gently until just combined.
  5. Turn the dough out onto a floured surface and fold it over itself 4-5 times to create layers.
  6. Use a biscuit cutter to cut out shapes from the dough, pressing straight down.
  7. Place the biscuits on a baking sheet, brushing the tops with extra buttermilk.
  8. Bake for 15–20 minutes until golden. Let them cool briefly before serving.

Notes

To make a healthier version, substitute half of the all-purpose flour with whole wheat flour or replace butter with unsweetened applesauce.
