Brownie Ice Cream Cake

Description

A spectacular layered dessert combining fudgy brownies with creamy ice cream, crushed cookies, and whipped cream topping. Perfect for celebrations and summer gatherings.


Ingredients

  • 1 box (18-20 oz) brownie mix or homemade batter
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/4 cup water
  • 1.5 quarts vanilla ice cream
  • 1.5 quarts chocolate ice cream
  • 15 Oreo cookies, crushed
  • 1 cup hot fudge sauce
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. 1. Preheat oven according to brownie mix directions. Prepare brownie batter and pour into greased 9×13 inch pan. Bake according to package instructions, then cool completely.
  2. 2. Wrap cooled brownies tightly with plastic wrap and freeze for at least 2 hours until solid.
  3. 3. Remove ice cream from freezer and let soften for 10-15 minutes until spreadable but not melted.
  4. 4. Spread vanilla ice cream evenly over frozen brownie layer, smoothing with offset spatula. Freeze for 30 minutes.
  5. 5. Sprinkle half of the crushed Oreos over vanilla layer, then drizzle with half the hot fudge sauce.
  6. 6. Spread chocolate ice cream over the Oreo layer, smoothing evenly. Freeze for 30 minutes.
  7. 7. Add remaining crushed Oreos and hot fudge sauce on top of chocolate layer.
  8. 8. Beat heavy cream with powdered sugar and vanilla extract until stiff peaks form. Spread or pipe over frozen cake.
  9. 9. Garnish with chocolate chips and additional Oreo pieces if desired.
  10. 10. Cover tightly with plastic wrap and aluminum foil. Freeze for at least 4 hours or overnight before serving.
  11. 11. Remove from freezer 5-10 minutes before slicing. Cut with hot knife for clean slices.

Notes

Store covered in freezer for up to 2 weeks. For easier serving, pre-slice while fully frozen. Can substitute any ice cream flavors or use homemade brownies. Add whipped cream frosting no more than 3-4 days before serving for best texture.
