- 3 cups shredded sharp cheddar cheese

- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 2 tablespoons butter
- 1 tablespoon olive oil
Instructions
- Heat the butter and olive oil in a large pot over medium heat until melted and shimmering. Add the diced onion and sauté until translucent, about 5 minutes. Sprinkle in a bit of salt to enhance sweetness.
- Stir in the minced garlic and cook for an additional minute.
- Add the broccoli florets and broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until fork-tender.
- Blend the mixture using an immersion blender until smooth and creamy.
- Return the soup to the pot and stir in the heavy cream, cheddar cheese, Dijon mustard, pepper, and nutmeg. Simmer until cheese is melted.
- Serve hot, garnished with additional cheese or reserved broccoli florets.
Notes
For a lighter version, substitute heavy cream with half-and-half or whole milk. Use low-sodium broth for a healthier option.
