Description

Ingredients

  • 4 medium flour tortillas
  • 1 cup shredded cheese
  • 4 large eggs
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/2 cup cooked and crumbled chicken bacon or turkey sausage
  • 1/4 cup diced tomatoes
  • Fresh cilantro or green onions for garnish
  • Salt and pepper to taste
  • Cooking oil or butter for the skillet

Instructions

  1. Begin by heating a skillet over medium heat. Add a small amount of cooking oil or butter, ensuring it’s evenly coated.
  2. Crack the eggs into a bowl and whisk them until fully blended. Season with salt and pepper, then pour into the hot skillet, stirring gently. Cook for about 2-3 minutes until softly scrambled.
  3. Remove the scrambled eggs from the skillet and set aside. In the same skillet, layer one tortilla and sprinkle half of your cheese over it.
  4. Add the scrambled eggs on top of the cheese, followed by the diced bell peppers, onions, and chicken bacon. Sprinkle the remaining cheese over everything and place a second tortilla on top.
  5. Cook the quesadilla for about 2-3 minutes on one side, pressing down gently with a spatula. Flip it after the bottom is golden and cheese starts to melt.
  6. Transfer the quesadilla to a cutting board and let it sit for a minute before cutting into wedges.
  7. Garnish with fresh cilantro or green onions before serving. Pair with salsa or avocado.
