Ingredients

  • 4 chicken thighs, skin-on and bone-in
  • 3 tablespoons olive oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Juice of 1 lemon
  • Fresh parsley or cilantro, chopped

Instructions

  1. Start by preparing the chicken thighs. Pat them dry with paper towels, which helps the skin get crispy when cooked. In a large bowl, whisk together the olive oil, smoked paprika, garlic powder, onion powder, oregano, salt, pepper, and lemon juice.
  2. Add the chicken thighs to the bowl, making sure they’re well-coated with the marinade. Let them marinate for at least 30 minutes.
  3. When you’re ready to cook, preheat your oven to 375°F (190°C). Arrange the chicken thighs skin-side up in a baking dish.
  4. Place the baking dish in the oven and roast for about 25-30 minutes until the internal temperature of the chicken reaches 165°F (74°C).
  5. Once done, let the chicken rest for about 5 minutes before serving.

Notes

For a healthier option, use skinless thighs or replace olive oil with avocado oil.
