  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 4 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • Zest of 1 lemon
  • Juice of half a lemon
  • Optional: 1 tablespoon honey for a touch of sweetness
  • Optional: Sliced lemon wheels for garnishing

Instructions

  1. Begin by preparing your chicken thighs. Pat them dry with paper towels and season generously with salt and pepper.
  2. Next, heat olive oil in a large, oven-safe skillet over medium-high heat. Add the chicken thighs skin-side down and cook for about 5-7 minutes.
  3. Flip the chicken thighs and add minced garlic, thyme, rosemary, lemon zest, and lemon juice. Toss to coat.
  4. Transfer the skillet to a preheated oven at 400°F (200°C) and roast for 25-30 minutes, until the chicken reaches an internal temperature of 165°F (75°C).
  5. Once done, let the chicken rest for about 5 minutes before serving.
