Description

Ingredients

  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup unsalted butter, melted
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 2 cups fresh or frozen blueberries
  • Optional: zest of 1 lemon
  • Optional: powdered sugar for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. Whisk together the eggs, melted butter, milk, and vanilla extract in a separate bowl.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fold in the blueberries, sprinkling frozen ones with a little flour beforehand.
  6. Grease a 9×5-inch loaf pan and pour the batter into it.
  7. Bake for about 60 minutes or until a toothpick comes out clean.
  8. Let the loaf cool in the pan for 10 minutes before transferring to a wire rack.

Notes

For healthier options, you can use whole wheat flour, coconut oil, or a natural sweetener like maple syrup. Serve with butter or yogurt.
