Description

Ingredients

  • Zest of 1 lemon
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the flour, sugar, and salt in a medium mixing bowl for the crust.
  3. Add the softened butter and mix until crumbly.
  4. Press this mixture evenly into the bottom of a greased 8×8 inch baking pan.
  5. Bake the crust for about 10-12 minutes until golden.
  6. Prepare the filling by combining blueberries, sugar, and cornstarch in a medium bowl.
  7. Add lemon juice, lemon zest, egg, vanilla extract, and a pinch of salt to the blueberry mixture.
  8. Pour the blueberry filling over the baked crust and spread it evenly.
  9. Bake for an additional 20-25 minutes until the filling is set and bubbly.
  10. Let the bars cool for at least 10-15 minutes before cutting.
