  • 1 cup rolled oats
  • 1 cup flour (all-purpose or almond)
  • ½ cup brown sugar
  • ½ cup butter, softened
  • A pinch of salt

Instructions

  1. Begin by preheating your oven to 325°F (163°C) and grease a springform pan with butter.
  2. Combine the graham cracker crumbs, melted butter, sugar, and salt in a mixing bowl. Mix until resembling wet sand, then press into the bottom of the pan. Bake for about 10 minutes until slightly golden. Remove and cool.
  3. Beat the softened cream cheese and granulated sugar using an electric mixer until smooth and creamy, about 2-3 minutes.
  4. Mix in the vanilla extract, then add the eggs one at a time, mixing until just combined. Finally, add the sour cream and mix until combined.
  5. Pour the cheesecake filling over the cooled crust, spreading it evenly and tapping to release air bubbles.
  6. Bake the cheesecake for about 50-60 minutes until firm around the edges and slightly jiggly in the center.
  7. Prepare the blueberry topping by combining blueberries, sugar, lemon juice, cornstarch, and cinnamon in a saucepan over medium heat. Stir until it bubbles and blueberries break down, about 5-7 minutes. Remove from heat and cool.
  8. Spread the blueberry topping over the cooled cheesecake.
  9. Mix the crumble topping ingredients in a bowl until crumbly, then sprinkle over the blueberry topping.
  10. Return cheesecake to the oven and bake for an additional 15-20 minutes until the crumble is golden brown. Allow to cool before chilling for at least 4 hours or overnight.
