- 1 package of puff pastry (thawed)
- 8 oz cream cheese (softened)
- 1 cup blueberries (fresh or frozen)
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 egg (beaten, for egg wash)
- Powdered sugar (for dusting, optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Roll out your thawed puff pastry on a lightly floured surface.
- Cut the puff pastry into squares, about 4 to 5 inches each.
- Combine the softened cream cheese, granulated sugar, and vanilla extract in a mixing bowl. Stir until smooth.
- Place a tablespoon of the cream cheese mixture in the center of each puff pastry square and top with a teaspoon of blueberries.
- Fold the corners of the pastry over the filling to create a pocket. Pinch the edges to seal.
- Brush the tops with the beaten egg.
- Arrange the pastries on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, or until puffed and golden brown.
- Allow to cool slightly before dusting with powdered sugar, if desired.
Notes
For a healthier twist, use low-fat cream cheese or Greek yogurt. You can also substitute blueberries with other berries, and add lemon zest or cinnamon for extra flavor.
