Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- Prepare the cream cheese mixture: In a bowl, beat together cream cheese, 2 tablespoons sugar, and ½ teaspoon vanilla extract until smooth.
- Mix the bread batter: In another bowl, combine flour, baking powder, and salt. In a separate bowl, whisk together melted butter, sugar, eggs, milk, and 1 teaspoon vanilla extract. Gradually fold wet ingredients into dry ingredients until just combined. Gently fold in blueberries.
- Layer and bake: Pour half of the batter into the prepared pan. Spread the cream cheese mixture evenly over the batter. Top with remaining batter. Bake 50-60 minutes until a toothpick inserted in the center comes out clean. Cool on a wire rack before slicing.
- Optional: Add lemon juice to the batter or drizzle lemon glaze on top for a blueberry lemon twist.
