Description

A stunning no-bake dessert featuring layers of chocolate cookies, rich whipped cream, and cherry filling that transforms into an elegant cake overnight.


Ingredients

  • Chocolate wafer cookies – 2 packages (9 ounces each)
  • Heavy whipping cream – 3 cups
  • Powdered sugar – 1/2 cup
  • Vanilla extract – 2 teaspoons
  • Cherry pie filling – 1 can (21 ounces)
  • Cocoa powder – 2 tablespoons
  • Cream cheese, softened – 8 ounces
  • Dark chocolate shavings – 1/4 cup
  • Maraschino cherries – 12 whole cherries

Instructions

  1. 1. Chill your mixing bowl and beaters in the freezer for 15 minutes. Beat the cream cheese until smooth and set aside.
  2. 2. Pour heavy whipping cream into the chilled bowl and beat on high speed until soft peaks form. Add powdered sugar and vanilla extract, continuing to beat until stiff peaks form.
  3. 3. Gently fold the softened cream cheese into the whipped cream until fully incorporated and smooth.
  4. 4. Spread a thin layer of whipped cream mixture on the bottom of a 9×13-inch baking dish.
  5. 5. Arrange a single layer of chocolate wafer cookies over the cream, breaking cookies as needed to fill gaps completely.
  6. 6. Spread a generous layer of whipped cream mixture over the cookies, followed by dollops of cherry pie filling spread evenly.
  7. 7. Repeat layering with cookies, whipped cream, and cherry filling until all ingredients are used, ending with a smooth layer of whipped cream on top.
  8. 8. Using a piping bag or spoon, create decorative swirls on the top layer. Dust with cocoa powder using a fine-mesh sieve.
  9. 9. Garnish with chocolate shavings and maraschino cherries arranged decoratively across the top.
  10. 10. Cover tightly with plastic wrap and refrigerate for at least 8 hours or overnight to allow cookies to soften.
  11. 11. Slice with a hot, clean knife and serve chilled.

Notes

This cake stores well covered in the refrigerator for up to 3 days. Can be frozen for up to 2 months without final garnishes. Add chocolate shavings and cherries just before serving for best presentation. For easier cutting, dip knife in hot water and wipe clean between slices.
