Description
A classic Chicken Caesar Salad featuring grilled chicken, crisp romaine lettuce, creamy dressing, and crunchy homemade croutons.
Ingredients
Scale
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 large head romaine lettuce, chopped
- ½ cup grated Parmesan cheese
- Freshly ground black pepper, for garnish
- For the Caesar Dressing:
- ½ cup mayonnaise
- 2 cloves garlic, minced
- 2 tablespoons lemon juice
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste
- For the Homemade Croutons:
- 4 cups cubed day-old bread (like French or Italian)
- ¼ cup olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt, to taste
Instructions
- Start by preheating your oven to 375°F (190°C). Spread your cubed bread on a baking sheet, drizzle with olive oil, and sprinkle with garlic powder, Italian seasoning, and salt. Toss to coat and bake for 10-12 minutes until golden.
- While the croutons bake, season the chicken breasts with olive oil, salt, and pepper. Heat a grill pan or skillet and cook the chicken for 7-8 minutes on each side until cooked through. Let it rest before slicing.
- To whip up the dressing, combine mayonnaise, minced garlic, lemon juice, Worcestershire sauce, Dijon mustard, salt, and pepper in a bowl. Whisk until smooth.
- In a large salad bowl, toss the romaine lettuce with the dressing. Top with sliced chicken, Parmesan cheese, and croutons. Toss gently and serve immediately.
Notes
For a healthier twist, substitute grilled tofu for chicken and Greek yogurt for mayonnaise. Use gluten-free bread for the croutons as needed.
