- 1 medium head of green cabbage, chopped
- 1 large onion, diced
- 2 cloves of garlic, minced
- 2 large carrots, sliced
- 2 stalks of celery, chopped
- 1 bell pepper (any color), chopped
- 1 can (14 oz) diced tomatoes (with juice)
- 6 cups vegetable broth (or chicken broth)
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Start by heating the olive oil in a large pot over medium heat. Add the diced onions and minced garlic, stirring them until they’re fragrant and the onions turn translucent—this usually takes about 5 minutes.
- Toss in the chopped celery and sliced carrots next. Sauté these for another 5 minutes, stirring occasionally.
- Mix in the bell pepper and chopped cabbage. Stir everything together, letting it cook for another 5 minutes.
- Pour in the diced tomatoes (with all their juice), the vegetable broth, dried thyme, dried oregano, and the bay leaf. Give it all a good stir, then increase the heat until it starts to boil.
- Reduce the heat to a simmer. Cover and cook for about 30 minutes.
- Remove the bay leaf and taste your soup. Add salt and pepper according to your taste preferences.
Notes
For extra flavor, consider adding a splash of apple cider vinegar or hot sauce. Store leftovers in an airtight container for up to 5 days.
