Description

A delightful appetizer featuring fresh tomatoes and basil on crispy toasted bread.


Ingredients

  • 1 loaf of crusty Italian bread or baguette
  • 4 ripe tomatoes, diced
  • 2 cloves of garlic, minced
  • 1/4 cup of fresh basil leaves, chopped
  • 3 tablespoons of extra virgin olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Balsamic glaze (optional for drizzling)
  • Parmesan cheese (optional for topping)

Instructions

  1. Preheat your oven to 400°F (200°C). Slice your Italian bread or baguette into about half-inch thick slices.
  2. Place the slices on a baking sheet and brush each piece lightly with olive oil. Bake in the preheated oven for about 5 minutes or until they’re golden and crisp.
  3. While the bread is toasting, combine the diced tomatoes, minced garlic, and chopped basil in a mixing bowl. Add olive oil, salt, and black pepper to taste.
  4. Once the bread is toasted to perfection, let it cool slightly, then heap the tomato mixture onto each slice.
  5. For an extra layer of flavor, drizzle some balsamic glaze over your bruschetta, and if you like, shave some Parmesan cheese on top.
  6. Serve immediately. Enjoy the crunch of the bread coupled with the vibrant, juicy topping.

Notes

For gluten-free, use gluten-free bread. For low-carb, serve topping on cucumber slices. Omit Parmesan for vegan.
