Description

Ingredients

  • Fresh bread (preferably a good Italian loaf or baguette)
  • Ripe tomatoes (Roma or vine-ripened are ideal)
  • Fresh basil leaves
  • Extra virgin olive oil
  • Garlic cloves
  • Balsamic vinegar (optional)
  • Salt and pepper to taste

Instructions

  1. Start by preheating your oven to 400°F (200°C). While the oven is warming up, slice the bread into about 1-inch thick slices.
  2. Place the bread slices on a baking sheet. Drizzle a bit of extra virgin olive oil over each piece.
  3. Pop them into your preheated oven for about 5–10 minutes, or until they’re golden brown and crunchy.
  4. While the bread is toasting, wash and chop the tomatoes.
  5. Dice a couple of garlic cloves finely.
  6. In a mixing bowl, combine the chopped tomatoes, minced garlic, chopped fresh basil, balsamic vinegar, salt, and pepper. Toss everything gently.
  7. Once your bread is perfectly toasted, remove it from the oven. Spoon the tomato mixture generously onto each slice.
  8. Finally, finish off with a drizzle of olive oil on top. Serve immediately while the bread is still warm and crispy.

Notes

Avoid soggy bread by using ripe tomatoes and mixing the toppings just before serving.
