- 4 cups all-purpose flour
- 1 ½ teaspoons instant yeast
- 1 tablespoon sugar
- 2 teaspoons salt
- 1 cup warm water (approximately 110°F)
- 1 cup fresh or frozen blueberries
- 1 tablespoon lemon juice
- 1 tablespoon honey or maple syrup (optional)
- 1 tablespoon baking soda (for boiling)
Instructions
- Combine the warm water, sugar, and instant yeast in a large mixing bowl. Let it sit for about 5 minutes until frothy.
- Add the salt and gradually mix in the flour, one cup at a time. Incorporate the lemon juice and gently fold in the blueberries.
- Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
- Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour.
- Punch down the dough and divide it into 8 equal portions. Shape each portion into a bagel.
- Preheat your oven to 425°F. Boil a large pot of water with baking soda and boil each bagel for about 1 minute per side.
- Transfer the boiled bagels to a parchment-lined baking sheet and sprinkle additional blueberries on top if desired.
- Bake for 20-25 minutes until golden brown. Allow to cool on a wire rack.
