A quick and delicious beef stir fry with vibrant vegetables, perfect for busy weeknights.

- 1 lb beef (flank steak or sirloin), sliced thinly against the grain
- 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas)
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 3 tablespoons soy sauce (or tamari for gluten-free)
- 2 tablespoons oyster sauce (optional, for extra flavor)
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil (canola or peanut oil works well)
- Cooked rice or noodles for serving
- Optional: sesame seeds for garnish, green onions for garnish
Instructions
- Start by marinating the beef. In a mixing bowl, combine the sliced beef with soy sauce, oyster sauce (if using), and cornstarch. Let it sit for about 10-15 minutes.
- While the beef is marinating, prepare your vegetables. Chop them into bite-sized pieces.
- Heat a large skillet or wok over medium-high heat. Once hot, add the vegetable oil.
- Add the marinated beef to the pan. Stir-fry for about 3-4 minutes until browned.
- Remove the beef from the pan and set it aside. In the same skillet, add the minced garlic and grated ginger, cooking for about 30 seconds until fragrant.
- Toss in the mixed vegetables. Stir-fry for 3-5 minutes until they’re crisp-tender.
- Return the beef to the pan. Stir everything together and cook for an additional 2 minutes.
- Serve the stir fry over cooked rice or noodles. Garnish with sesame seeds and chopped green onions!
Notes
For a healthier alternative, use low-sodium soy sauce and olive oil.
