- 2 to 3 pounds boneless, skinless chicken thighs (or chicken breasts)
- 1 cup barbecue sauce (your favorite brand or homemade)
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon cayenne pepper (optional)
- 1 cup chicken broth
- Buns or rolls for serving
Instructions
- Start by heating a large skillet over medium heat. Add olive oil and once it’s shimmering, toss in the chopped onions. Sauté them for about 5 minutes, until they’re soft and translucent.
- Add the minced garlic to the skillet, cooking for another minute. Stir in the smoked paprika, cumin, salt, black pepper, and cayenne pepper if desired.
- Transfer the onion and spice mixture to your slow cooker. Place the chicken thighs on top, then pour in the chicken broth and barbecue sauce. Mix gently to coat the chicken.
- Cover the slow cooker and set it to low for 6-8 hours or high for 4-5 hours. If using an Instant Pot, cook on high pressure for 12-15 minutes with natural release.
- Once the chicken is fork-tender, shred it directly in the slow cooker using two forks. Mix with the sauce to combine.
- Serve the pulled chicken on toasted buns and drizzle with more barbecue sauce if desired.
Notes
For a tangy twist, substitute half the barbecue sauce with apple cider vinegar. Serve with sides like coleslaw or baked beans.
