Ingredients

  • 1/4 cup BBQ sauce

  • 4 cups mixed salad greens (romaine, spinach, arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, sliced
  • 1/2 red onion, thinly sliced
  • 1 avocado, diced
  • Optional: 1/4 cup crumbled feta cheese or shredded cheddar cheese
  • 1/4 cup olive oil (for dressing)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste (for dressing)

Instructions

  1. Begin by preparing your chicken. Cut the boneless chicken breasts into bite-sized pieces. In a bowl, mix the olive oil, BBQ sauce, garlic powder, onion powder, salt, and pepper. Toss the chicken pieces in this marinade and let them sit for at least 10 minutes.
  2. While the chicken marinates, preheat your grill or grill pan over medium-high heat.
  3. Thread the marinated chicken pieces onto the skewers, leaving a small space between each piece for even cooking.
  4. Grill the skewers for 6-8 minutes on each side or until cooked through (internal temperature should reach 165°F).
  5. Prepare the salad by combining the mixed greens, cherry tomatoes, cucumber, bell pepper, red onion, and avocado in a large serving bowl.
  6. Whisk together the dressing ingredients: olive oil, apple cider vinegar, honey or maple syrup, Dijon mustard, salt, and pepper.
  7. Once the chicken is ready, let it rest for a few minutes, then slice it and add to the salad. Drizzle the dressing on top, toss gently, and serve immediately.

Notes

For a vegetarian twist, replace chicken with grilled tofu or mushrooms. Consider serving with pita chips for a crunchy contrast.
