Description

Ingredients

  • 4 pieces flatbread or naan bread
  • 2 cups cooked chicken breast, shredded
  • 3/4 cup BBQ sauce
  • 2 cups mozzarella cheese, shredded
  • 1 cup gouda or cheddar cheese, shredded
  • 1/2 medium red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. 1. Preheat your oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper or prepare a pizza stone.
  2. 2. In a medium bowl, combine shredded chicken with half of the BBQ sauce, garlic powder, salt, and pepper until well mixed.
  3. 3. Brush each flatbread lightly with olive oil to create a moisture barrier.
  4. 4. Spread a thin layer of the remaining BBQ sauce on each flatbread, leaving a half-inch border around the edges.
  5. 5. Sprinkle half of the cheese blend evenly over the sauce on each flatbread.
  6. 6. Distribute the BBQ chicken mixture evenly across all flatbreads.
  7. 7. Top with the remaining cheese and scatter thinly sliced red onions over the top.
  8. 8. Place flatbreads on the prepared baking sheet or pizza stone and bake for 10 to 12 minutes until cheese is melted and bubbly and edges are golden brown.
  9. 9. Remove from oven and let rest for 2 minutes before garnishing with fresh cilantro.

Notes

Store leftover pizza in an airtight container in the refrigerator for up to 3 days. Reheat in a 375-degree oven for 8 minutes to restore crispiness. For meal prep, assemble flatbreads and freeze unbaked for up to one month. Bake directly from frozen, adding 5 minutes to cooking time.
