- 1 pound large shrimp, peeled and deveined
- 1 cup cornstarch
- 1 cup buttermilk (or use regular milk with a splash of vinegar for a substitute)
- 1 cup panko bread crumbs
- Vegetable oil (for frying)
- Salt and pepper (to taste)
- ½ cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha
- 1 teaspoon lime juice
- Optional: chopped green onions for garnish
Instructions
- Start by preparing the shrimp. Rinse them under cold water and pat them dry with paper towels.
- In a bowl, mix together the cornstarch, salt, and pepper.
- Pour the buttermilk into another bowl, and place the panko bread crumbs in a separate dish.
- Dredge each shrimp in the cornstarch mixture, then dip it into the buttermilk, and finally coat it with panko bread crumbs.
- Heat about an inch of vegetable oil in a large skillet over medium-high heat.
- Fry the shrimp in batches until golden brown—about 2-3 minutes on each side.
- While the shrimp are frying, prepare the Bang Bang sauce by combining mayonnaise, sweet chili sauce, sriracha, and lime juice.
- Once all shrimp are cooked, toss them into the bowl with the Bang Bang sauce.
- Serve warm, garnished with chopped green onions.
Notes
For a lighter version, consider baking the shrimp instead of frying. Use gluten-free alternatives if needed.
