Description

Ingredients

  • 1 pound of chicken breast, cut into bite-sized pieces
  • 2 tablespoons of olive oil
  • 2 tablespoons of soy sauce (or tamari for gluten-free)
  • 1 tablespoon of honey or maple syrup
  • 1 tablespoon of cornstarch
  • 1 teaspoon of garlic powder
  • 1 teaspoon of ginger powder
  • 1 teaspoon of cayenne pepper (adjust if you prefer less heat)
  • Salt and pepper to taste
  • Skewers (wooden or metal)
  • Green onions, sliced for garnish (optional)
  • Red bell pepper or zucchini, cut into chunks (optional)
  • Sesame seeds (optional)

Instructions

  1. Start by marinating the chicken. In a spacious bowl, combine the olive oil, soy sauce, honey, cornstarch, garlic powder, ginger powder, cayenne pepper, salt, and pepper. Whisk until well combined. Add the chicken pieces to this bowl, ensuring each piece is nicely coated. Cover and let it marinate in the fridge for at least 15 minutes.
  2. While the chicken marinates, soak your wooden skewers in water for about 10 minutes. If using metal skewers, skip this step.
  3. Preheat your grill or grill pan over medium-high heat. Once hot, thread the marinated chicken onto the skewers.
  4. Place the skewers on the grill, cooking for about 5-7 minutes on each side or until the chicken is fully cooked, and the internal temperature reaches 165°F.
  5. As the skewers grill, consider making an extra drizzle of sauce by mixing equal parts chili sauce and mayonnaise.
  6. Once cooked, remove the skewers from the grill and let them rest for a couple of minutes. Garnish with sliced green onions and sesame seeds if desired.

Notes

For a healthier option, consider swapping chicken with turkey or firm tofu. Adjust spiciness by changing the amount of cayenne pepper.
