Description

Ingredients

  • 2 ripe bananas
  • 2 eggs
  • 1 cup rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon (optional)
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt
  • Milk as needed (about 2 to 6 tablespoons)
  • Butter or oil for the pan

Instructions

  1. Mash the bananas in a bowl with a fork until mostly smooth.
  2. Add the eggs and mix until combined and creamy.
  3. Stir in the oats, baking powder, cinnamon, vanilla, and salt.
  4. Let the batter sit for 5 minutes to thicken.
  5. Adjust the consistency with a splash of milk if it looks too thick.
  6. Heat a pan over medium heat with a little butter or oil.
  7. Scoop the batter onto the pan and cook until bubbles form, about 2 to 3 minutes.
  8. Flip and cook for another 1 to 2 minutes until golden.
  9. Keep finished pancakes warm in a low oven while cooking the rest.

Notes

For best results, don’t skip the resting time and keep the batter thick.
