Delicious Banana Oatmeal Muffins

Description

Soft, moist muffins packed with ripe bananas and hearty oats. Perfect for breakfast, snacks, or a quick on-the-go treat.


Ingredients

  • 2–3 medium ripe bananas

  • 2 cups rolled oats

  • 2 large eggs

  • 1 cup almond milk (or preferred milk)

  • 2 tsp baking powder

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

  • Pinch of salt

  • Optional: nuts, chocolate chips, or berries


Instructions

  1. Preheat Oven: Preheat to 350°F (175°C).

  2. Mash Bananas: In a bowl, mash bananas until mostly smooth.

  3. Add Wet Ingredients: Mix in eggs, almond milk, and vanilla extract.

  4. Combine Dry Ingredients: In another bowl, stir together oats, baking powder, cinnamon, and salt.

  5. Mix Together: Gradually fold dry ingredients into wet mixture until just combined.

  6. Prepare Muffin Tin: Grease or line muffin tin.

  7. Fill Cups: Spoon batter into cups about three-quarters full.

  8. Bake: Bake 20–24 minutes, until tops are lightly golden and a toothpick comes out clean.

  9. Cool: Let muffins cool 5 minutes in the tin, then transfer to a wire rack.
