Banana Bread Recipe – The Best Moist & Easy Guide

  • Author: Mark Bennett
  • Total Time: 1 hour 10 minutes

Description

This banana bread recipe is soft, moist, and packed with natural sweetness from ripe bananas. Perfect for breakfast, dessert, or a mid-day snack, it’s easy enough for beginners but delicious enough to impress. Customize it with chocolate chips, nuts, or try a vegan twist for extra variety!

Ingredients

  • Mash 3 medium very ripe bananas in a large bowl until smooth.

  • Add 1 cup of granulated sugar (or half brown sugar for extra moisture) and 1/2 cup room-temperature butter. Mix until creamy.

  • Beat in 2 large eggs (room temperature) and 1 teaspoon vanilla extract. Stir until combined.

  • In a separate bowl, whisk 2 cups of all-purpose flour, 1 teaspoon baking soda, and 1/4 teaspoon salt.

  • Gently fold the dry ingredients into the wet mixture until just combined; small lumps are okay.

  • Optional: Fold in 1/2 cup chopped nuts or 1/3 cup chocolate chips for added texture and flavor.

  • Optional: Mix in 2 tablespoons plain yogurt or sour cream for extra moistness.

Instructions

  • Preheat & Prep: Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.

  • Mash Bananas & Mix: Mash bananas in a large bowl, then add sugar, butter, eggs, and vanilla extract. Mix until creamy.

  • Combine Dry Ingredients: In a separate bowl, whisk flour, baking soda, and salt. Gradually fold into wet ingredients.

  • Add Extras: Gently fold in chocolate chips or nuts if desired. Avoid overmixing.

  • Bake: Pour batter into pan. Bake 55–65 minutes, or until a toothpick comes out clean. Cover loosely with foil if top browns too fast.

  • Cool & Serve: Cool in the pan for 10–15 minutes, then transfer to a wire rack. Slice when fully cooled.

Notes

Use very ripe bananas—they’re sweeter and ensure a moist crumb.

Don’t overmix the batter to avoid a dense loaf.

Add a spoonful of yogurt or sour cream for extra softness.

Toast nuts before adding for richer flavor.

Slice after fully cooling for clean, neat pieces.

Freeze slices for later enjoyment; thaw at room temperature or in the fridge.
