- Juice of 1 lemon
- Zest of 1 lemon
- 1 teaspoon Dijon mustard

Instructions
- Preheat your oven to 400°F (200°C).
- Place the salmon in a baking dish and drizzle olive oil over the fillets.
- Sprinkle salt and pepper generously on both sides.
- Bake the salmon in the oven for about 15–18 minutes.
- While the salmon is baking, melt the butter in a saucepan over medium heat.
- Add the minced garlic and sauté for about a minute until fragrant.
- Pour in the heavy cream and simmer gently for about 5 minutes, stirring occasionally.
- Once thickened, add the lemon juice, zest, Dijon mustard, and optional honey.
- Whisk everything together thoroughly and let it simmer for another minute.
- Remove the salmon from the oven and drizzle the creamy lemon sauce over the fillets.
- Finish by sprinkling some chopped fresh parsley on top and serve immediately.
Notes
For lighter options, consider using half-and-half or coconut cream instead of heavy cream. Store leftovers separately for best results.
