  • 1 packet (about 1 oz) ranch dressing mix
  • 1 cup buttermilk
  • 1 cup breadcrumbs (panko for extra crunch is excellent)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: Fresh herbs (like parsley or dill) for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the buttermilk with the ranch dressing mix in a large bowl and whisk until fully blended.
  3. Place the chicken thighs in the buttermilk mixture, ensuring they’re well-coated, and let soak for at least 30 minutes.
  4. Mix your breadcrumbs with olive oil, salt, and pepper in a shallow dish.
  5. Press each chicken thigh into the breadcrumb mixture until entirely covered.
  6. Arrange the coated chicken on a baking sheet lined with parchment paper.
  7. Bake for 35 to 40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C). Broil for last 2-3 minutes if desired.
  8. Let the chicken rest for 5 minutes before serving.

Notes

For deeper flavor, marinate the chicken overnight in buttermilk and ranch mix. Can be adapted for low-carb or gluten-free diets.
