- 2 cups cooked chicken, shredded (or cubed)
- 3 medium potatoes, peeled and diced into bite-sized pieces
- 2 cups fresh broccoli florets
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup chicken broth (or vegetable broth)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Optional: 1/2 cup cream cheese, softened
- Optional: Chopped green onions, for garnish
Instructions
- Preheat your oven to 350°F (175°C). Boil water in a large pot and add diced potatoes; cook for 10-12 minutes until fork-tender. Drain and set aside.
- Combine shredded chicken, cooked potatoes, and broccoli florets in a mixing bowl. Add sour cream, chicken broth, garlic powder, onion powder, paprika, olive oil, salt, and pepper. Mix until coated evenly.
- Transfer the mixture into a 9×13-inch baking dish, spreading it evenly. Sprinkle cheddar cheese generously over the top.
- Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 15-20 minutes until cheese is bubbly and golden brown.
- Let the casserole sit for a few minutes before serving. Garnish with green onions if desired.
Notes
For a healthier twist, substitute with low-fat sour cream or Greek yogurt. You can use mixed vegetables instead of broccoli or add some mushrooms for variety.
