Description

Crispy, golden popcorn chicken baked to perfection and tossed in sweet honey BBQ sauce. A healthier alternative to fried chicken that’s perfect for dinner or parties.


Ingredients

  • 1.5 pounds boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 2 cups panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3/4 cup BBQ sauce
  • 1/4 cup honey
  • Cooking spray as needed

Instructions

  1. 1. Preheat oven to 425°F and line a baking sheet with parchment paper or place a wire rack on top.
  2. 2. Cut chicken breasts into 1-inch bite-sized pieces and pat dry with paper towels.
  3. 3. Set up three shallow bowls: one with flour seasoned with half the spices, one with beaten eggs, and one with panko breadcrumbs mixed with remaining spices.
  4. 4. Coat each chicken piece in flour, then egg, then breadcrumbs, pressing firmly to adhere.
  5. 5. Arrange breaded chicken pieces on prepared baking sheet with space between each piece.
  6. 6. Lightly spray the tops with cooking spray and bake for 15-18 minutes until golden brown and internal temperature reaches 165°F.
  7. 7. While chicken bakes, warm BBQ sauce and honey together in a small saucepan over low heat, stirring to combine.
  8. 8. Transfer baked chicken to a large bowl, pour honey BBQ sauce over top, and toss gently to coat evenly.
  9. 9. Serve immediately with your favorite sides and extra sauce for dipping.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a 375°F oven for 10-12 minutes to restore crispiness. Can be frozen for up to 2 months. Use a wire rack for crispiest results.
