Description

A hearty and delicious breakfast sandwich featuring a toasted everything bagel, fluffy eggs, crispy bacon, melted cheddar cheese, and fresh vegetables. Perfect for busy mornings or leisurely weekend brunches.

  • 2 everything bagels
  • 4 large eggs
  • 6 bacon strips
  • 4 cheddar cheese slices
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons mayonnaise
  • 1 cup fresh spinach leaves
  • 4 tomato slices

Instructions

  1. 1. Cook bacon strips in a large skillet over medium heat for 8-10 minutes until crispy, flipping occasionally. Transfer to a paper towel-lined plate to drain.
  2. 2. Heat a clean skillet over medium-low heat and add butter. Place ring molds in the pan and crack one egg into each mold.
  3. 3. Season eggs with salt and pepper. Cook for 2 minutes until whites are set but yolks remain slightly runny.
  4. 4. Place a cheese slice on top of each egg, cover the skillet with a lid, and cook for 1 minute until cheese melts.
  5. 5. Toast bagels until golden brown and slightly crispy. Spread mayonnaise on the cut sides of each bagel half.
  6. 6. On the bottom bagel half, layer the cheesy egg, bacon strips, spinach leaves, and tomato slices.
  7. 7. Top with the other bagel half and press down gently to compress slightly.
  8. 8. Serve immediately while hot, or wrap in foil for later enjoyment.

Notes

Store wrapped sandwiches in the refrigerator for up to 3 days or freeze for up to 1 month. Reheat in the oven at 350°F for 15 minutes or in an air fryer at 350°F for 5-7 minutes. For best results, store tomatoes separately and add them after reheating. Customize with your favorite cheese, protein, or vegetables.
