Description

A hearty and comforting beef stew packed with seasonal vegetables and aromatic herbs, perfect for fall evenings.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 tablespoons olive oil or vegetable oil
  • 1 large onion, diced
  • 3 carrots, sliced
  • 3 parsnips, sliced (optional)
  • 2–3 cloves garlic, minced
  • 4 medium red potatoes, cubed
  • 3 cups beef broth or stock
  • 1 cup red wine vinegar or sparkling grape juice
  • 2 tablespoons tomato paste
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Start by heating 2 tablespoons of olive oil in a large Dutch oven over medium-high heat. Add the beef cubes in batches, browning them on all sides for about 5 to 7 minutes.
  2. Remove the beef from the pot and set aside. In the same pot, lower the heat to medium and add the diced onion. Sauté until soft and translucent, around 5 minutes.
  3. Add the minced garlic and stir for about 30 seconds until fragrant. Then, toss in the sliced carrots and parsnips (if using), cooking for an additional 2 to 3 minutes.
  4. Stir in the browned beef along with the cubes of red potatoes. Pour in the beef broth and red wine vinegar (or sparkling grape juice).
  5. Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let it simmer for 2 to 3 hours.
  6. Stir occasionally. After about 2 hours, check the beef for tenderness and adjust cooking time if necessary. For a thicker broth, remove the lid during the last 30 minutes.
  7. Once ready, discard the bay leaf and adjust seasoning as needed. Ladle into bowls and garnish with chopped parsley if desired.

Notes

For a lighter version, use chicken instead of beef or replace with lentils for a vegetarian option.
